Position: Oven Baker
The trained baker is responsible for the proofing and baking of crackers and their make up on the bakery make up systems. His responsibility includes verifying the oven and proof box are in operational condition.
Follow GMP's everywhere with in the facility.
Detailed job duties include but are not limited to:
- Do a visual inspection of equipment
- Follow the Hand Washing Procedures - first wash your hands when you enter the production room then every hour
- Ensure the proper proof time for crackers. Communicate any problems with the mixer.
- Use correct baking programs as posted
- To check several trays in different heights of the racks at the end of the baking process
- Each oven needs to reach the set temperature before the next batch is baked
- To oversee the Fritsch line helpers to ensure a accurate production process
- Monitor the product quality by checking the color, thickness and even distribution of seeds and cheese toppings using the tools provided
- At the end of the last shift of the day to turn off the proffers, ovens and leaving all doors open on Friday's for cleaning
- Mop the proffer floor daily with Bleach water and pour one cap of Bleach into the drain
- Assist the "Fritsch Helper" in cleaning the make up line
- To leave the oven area "broom clean" and free of trash (all paper and card board are recycled in the designated dumpster)
- Follow "Cleaning Plan for Dr. Kracker"
- Keep maintenance log on coolers, tray cleaning machine and ovens
- Assist Grate cheese for the next days production
- Follow the Fritsch Post inspection guide
